Carrots – 2 (chopped)

French beans – 1 cup (chopped)
Potato – 1 (chopped)
Tomatoes – 3
Onion – 1 (finely chopped)
Green peas – 1 cup
Salt to taste
Garam masala – 1 tbsp
Coriander leaves
Cumin seeds
Turmeric powder
Green chillies – 2
Ginger and Garlic paste- 1 tbsp
Asafetida or Hing
Oil- 4tbsp

Cooking method:

  • Heat oil in a medium size pan, put cumin seeds and sliced green chillies. When it starts splutter, add chopped onion and fry till it turns golden brown. Then add turmeric powder, asafetida, ginger and garlic paste & mix well.
  • Add the carrots, green peas, French beans and potato to pan. Add 1 cup of water and stir it. Cook for 5-10 minutes until the vegetables are softens.
  • Add the salt, garam masala powder. Then mix it well.
  • Meanwhile prepare tomato puree. For that cut the tomatoes into cubes, grind with adding ginger and green chilies.
  • When the vegetables are cooked, add the tomato puree then stir and simmer gently for 5 minutes. Turn into a serving dish and garnish the vegetable curry with the fresh coriander.
Hot and delicious vegetable curry or sabzi is ready to serve. It would be very nice combination with dosa, roti and chapathi.
