Mirchi Bajji or mirchi vada is a mouth watering popular snack from Rajasthan which everywhere in India familiar with. Chilli stuffed with a spicy potato mixture and dipped in gram flour batter, then deep fry in oil. All would like this spicy snack in winter and rainy season. I hope that all may enjoy it.


Green Chillies (Large sized) – 10

Oil for deep frying


For Batter:

Gram flour or Besan – ½ Cup

Baking powder – 1tsp

Water – 1/4th cup Approx

Cilantro (Chopped) – 1tsp

Cumin seeds or Jeera – ½ tsp

Salt – ¼ tsp


How to prepare:

·         Take besan in a medium-sized bowl, add baking powder, salt, Cumin seeds, and finely chopped cilantro. Mix it well.

·         Add water little by little and knead it well without creating lumps. Make the smooth batter and it should be little thick inconsistency. It should be nicely coated on chili.


For Stuffing:

Potatoes – 3 Nos or 1 cup (Boiled, peeled and Mashed)

Cumin seeds or Jeera – ½ tsp

Coriander powder or Dhania – 1tbsp

Cilantro or coriander leaves (Chopped) – ½ tbsp.

Mango powder or Amchoor – ½ tsp

Garam masala – 1tsp

Red chilli powder (optional)

Salt- ½ tsp


Preparation for Stuffing:


·         Take boiled and mashed potatoes in a bowl. Add salt, Cumin seeds, Coriander powder, chopped Cilantro, Garam masala powder, Mango powder. If you want more piquant taste you can add red chilli powder.

·         Mix well all these ingredients.


·         Slit Chillies lengthwise or vertically. (Do not cut it into halves)

·         Remove the seeds for reducing the chillies piquancy flavor.

·         Fill them with potato mixture. Make sure that you don’t break the chilli.


·         Meanwhile heat the oil in a deep pan or tawa in medium high flame.

·         Dip the chillies into besan batter. Batter should be coated nicely on chilli.

·         Drop it in the hot oil and turn them all around 2-3 times. Fry till it turns to light brown color.


Now stuffed Mirchi Bajji or Chilli Fritters or Mirchi vada is ready. Serve fresh with tomato sauce.
